Nerd Kitchen: Pumpkin Juice Recipe

I’ve always enjoyed the delicious cold Pumpkin Juice served at Universal Orlando’s Wizarding World of Harry Potter, and as fall approaches it felt like the perfect drink to try making at home – and this recipe pretty much nails the flavor. Check out this delicious Pumpkin Juice recipe.

For this recipe you will need the following:

  • 1 15 oz. can pure pumpkin*
  • 2 ¼ cups water
  • 3 cups apple juice
  • ½ cup apricot nectar
  • ½ tsp vanilla extract or essence (I used extract, the original recipe used essence)
  • 2 tsp pumpkin pie spice
  • ½ cup sugar

2017-08-30 13.33.30*The original recipe uses half of a butternut squash instead of canned pumpkin. Depending on the time of year or where you live, canned pumpkin may not be easy to find, so you’ll want to use the steps for roasting butternut squash in the original recipe. If you have canned pumpkin, I found that it worked great for me.

The first step is to make the “pumpkin juice” base, which is the pumpkin (or squash) and water. (In the original recipe the author stated that they used about 1 ½ cups of butternut squash – since my can of pumpkin was a bit more than that, I added a little extra water). Put the pumpkin and water in a blender and blend until well combined.

2017-08-30 14.09.432017-08-30 14.11.04In a saucepan, combine 1.25 cups of your pumpkin juice base with all the other ingredients and stir well.

2017-08-30 14.16.34Bring the mixture to a boil, and then reduce to simmer for about 30 minutes.

2017-08-30 14.22.59Take the mixture off the heat to cool, and then chill to serve – or if you prefer, I think this would also be great served hot.

The amount of pumpkin juice base that I initially got allowed me to make 3 batches using the above recipe, and each batch was about a quart. I did add 1/3 cup of sugar instead of ½ cup after the first batch as it was initially a on the edge of too sweet for me.
